potato salad served in an egg cup

thinking and trying to be creative . . .

boil yer eggs, remove shells, half and combine yolks in a bowl, add what you like for deviled eggs (mine is a secret ;) and put into frosting bag.
make your potato salad, spoon into egg cups, make a cute design from frosting bag with yolk mixture on top, add bacon pieces
then bring to the party!

BEWARE: guests could be caught tossing it in the trash if you have added raw onions - whatever - grow a palate ;)

Potato Salad Recipe - Yum

Chop up 1 cup celery and 1 cup white or red onion:

Add 1/2 cup light mayo, 1/2 cup sour cream & 1/3 cup apple cider vinegar, 2 tsp kosher salt & 1/2 tsp pepper:

2 1/2 lbs boiled & cubed red potatoes, 3 hard cooked eggs diced & 1/4 cup chopped fresh parsley:
