Birthday lunch

I made a yummy Mexican themed birthday lunch:

Fish tacos served in a half of an avocado

Pico in a cored out tomato

Rice & Beans served over flour tortillas (cut into cupcake shapes)

7-layer dip served on a small corn tortilla - one big chip ;)

Love 7-layer dip and is more fun when the presentation is beautified ;)

Tomatillo Salsa - Yum!
Baked a flour tortilla in a fun little pan, lightly buttered it after baking and sprinkled it with cinnamon and sugar. Two scoops of ice cream, homemade hot fudge sauce, strawberries, sprinkles and homemade whipped cream - yum!
We were supposed to have family over and they had to cancel at the last minute . . . but all the preparation was done - so I had to show what they missed to get them to reschedule ;)
